Ingredients of Bicol Express with Crispy Pork Belly

  1. Prepare 1 tbsp of Canola Oil.
  2. You need 1 of onion peeled and sliced thinly.
  3. Prepare 4 cloves of garlic, peeled and minced.

  5. Prepare 3 tbsp of fresh shrimp paste or cooked shrimp paste in bottle.

  8. It's 2 of finger chilies (Green long Chili) sliced.

  10. Prepare 1 teaspoon of sugar.

Normally the pork boiled and fried until crispy. Instead of stewing the pork, I deep fried it to be very crispy and then poured. This Bicol Express is made of pork belly, traditional shrimp paste, mild chilies, and coconut milk. It is rich, savory, fragrant from the chilies but not too spicy.

Bicol Express with Crispy Pork Belly step by step

  1. Bring Pork Belly into a boil.
  2. When Pork Belly is tender, rub salt on it and heat oil then deep fry.
  3. Once the Pork Belly is Brown and Crispy set it aside and prepare the pot and heat oil.
  4. Add onion, garlic, ginger and fine pepper then add the shrimp paste and sautee.
  5. Add coconut milk, water, thai chili,finger chili and sugar. Bring to a simmer for about 10 minutes until thickened.
  6. Cut the Crispy Pork Belly and put it on top of the sauce and garnish some whole Thai Chili.
  7. Serve hot with Hot Cooked Rice.
